Marinated salmon with asparagus under mint sauce
Exquisite dish of thin slices of salmon, marinated in balsamic vinegar, garnished with asparagus and fragrant mint sauce.
- 400 g of fresh salmon
- 8 thick stalks of asparagus
- salt and pepper
- 15 g of peppermint
- 15 g garden mint
- 150 g extra virgin olive oil
- 3 tbsp balsamic vinegar
- 1 tsp soy sauce
Salmon cut into thin slices (approx. 0.5 cm thick). Asparagus cleaned of coarse fibers and put in boiling water for 2 minutes, then cool in an ice bath, dry on a paper towel and each stem is cut lengthwise in half.
Slices of salmon to marinade in 3 tablespoons of balsamic vinegar, salted and pepper.
To prepare mint sauce, mint leaves to mix with the remaining ingredients of the sauce in a food processor.
On the dish put the asparagus, top with salmon and pour mint sauce.
