Eggs with Vegetables in Turkish style
Is very tasty and not at all hard to cook. If you want a special meal based on eggs, I invite you to try.
- 2 tablespoons oil
- 2 onions
- 1 bell pepper red or green
- 1-2 chili peppers
- 400 g tomatoes
- 1 teaspoon sugar
- 4 eggs
- 6 tablespoons yogurt
- 2 cloves garlic
- 1/2 bunch parsley
Slice the onions, peppers cut in half, peel and slice, cut the tomatoes into cubes.
In a pan heat the oil and add the vegetables, stir constantly until soft, then add sugar and mix well. Continue to cook until the liquid is reduced.
When the liquid fell, with a wooden spoon, make 4 holes in the vegetable mixture and place one egg in each hole, cover the pan with a lid and leave on low heat until cooked eggs completely.
Yogurt mixed with crushed garlic. Eggs served with yogurt and finely chopped parsley.
