Cake for Mother day
For cake layer
- wheat flour – 200 g
- pumpkin – 350 g
- eggs – 3 pcs
- condensed milk – 200 g
- baking powder – 1 pack
- vegetable oil – 3 tbsp
For the filling
- apple – 7 pcs
- condensed milk – 3 tbsp
- lemon zest – with half a lemon
- semolina – 3 tbsp
- sugar – 50 g
- red apples – 7 pcs
- puff pastry – 200 g
- cream 33% – 100 g
- egg yolk – 1 pc
- sugar – 350 g
- powdered sugar – 30 g
- pumpkin puree – 70 g
- water – 700 ml
First prepare the cake layers. Pumpkin peel, cut into slices and boil in a small amount of water. Drain and make mash with a blender.
Add in the pumpkin puree sweetened condensed milk, eggs, vegetable oil and mix well, and then add the sifted flour with baking powder and salt. Mix until smooth (dough should be like thick cream).
Cake layers can be baked in two ways:
1. Heat the pan and spread 3 tablespoons of dough (to grease the pan is not necessary), cover with a lid and bake 3 minutes.
2. You can bake in the oven. To do this, draw a circle on the parchment of about 20 cm, spread 3 tablespoons of dough and bake for 3 minutes at 180 ° С.
I got from this quantity of ingredients 7 layers.
Apples cleanse, rub on a grater, put in a pan and simmer for about 8 minutes, then add condensed milk, semolina, sugar and simmer for 3 minutes. Filling should be thick.
On the cake layers are applied stuffing, except for the top, and then cover the cake top with foil, put the goods and leave for an hour.
While the cake is under pressure, do the decoration.
First of all we make basket.
For this puff pastry cut into strips, 4 long, and the rest cut into height the cake + 2 sm. Take a bowl with a diameter on 2-3 cm larger than the diameter of the cake, cover with foil on top, attach the top short strips, and between them staggered skip long strips and fastened the ends. One long strip a little roll, with one side slightly wetted with water, placed on fixed strips and slightly presses.
All this structure grease slightly beaten egg yolk and send in the oven, preheated to 180 ° С, to light browning.
Prepare the cream, whisk the cream of this with powdered sugar to stable peaks, and then the parts add pumpkin puree and mix gently.
Making a rose.
Apples cut into a very thin slices. In a pan pour 700 ml of water, add 350 grams of sugar, stir and give a boil, then put the apples, and after they boil, remove from the pan, put in a colander to drain syrup.
After that start forming the roses. Small circles twist for middle, then take the circles of larger diameter, screw-on top and slightly bend the ends, thus giving the petals a natural look. Large petals divide into two parts, and the roses make any size you need.
Everything is ready for decoration. In the basket put the cooled cake, top spread the cream and place our roses! The final touch will be a mint, which we place between the roses.
